GRILLED LOBSTER
Ingredients
2 Lobsters (1 lb or more)
For the caper butter:
6 tablespoons unsalted butter
2 tablespoons drained capers
1 clove garlic, peeled and thinly sliced
2 tablespoons chopped chives, tarragon, and/or basil
2 1-1/2 pound lobsters
Coarse sea salt and freshly ground black pepper
Melt all ingredients together and fry.
Instructions
- Split the lobster on the belly end.
- Pre-Heat grill to medium heat
- Place the lobster on the grill split side down. Grill approximately 3 minutes.
- Turn over the lobsters
- Spoon in Caper butter into the split cavity and continue grilling until done.
- Do not over cook.
- Serve on a platter with Caper butter
